The Food Handling certificate leads to a nationally recognised Statement of Attainment for the unit of competency SITXFSA005 Use hygienic practices for food safety.

This unit describes the performance outcomes, skills and knowledge required to use personal hygiene practices to prevent contamination of food that might cause food-borne illness.
It also requires the ability to follow predetermined organisational procedures and to identify and control food hazards.

The food safety certificate ensures that individuals are aware of their responsibilities as a Food Handler and provides comprehensive information about personal hygiene and food safety.

At the end of this course, students will be able to:

This unit describes the performance outcomes, skills and knowledge required to use personal hygiene practices to prevent contamination of food that might cause food-borne illnesses. It requires the ability to follow predetermined organisational procedures and to identify and control food hazards.

The unit applies to all organisations with permanent or temporary kitchen premises or smaller food preparation or bar areas.

This includes restaurants, cafes, clubs, hotels, and bars; tour operators; attractions; function, event, exhibition and conference catering; educational institutions; aged care facilities; correctional centres; hospitals; defence forces; cafeterias, kiosks, canteens and fast food outlets; residential catering; in-flight and other transport catering.

It applies to food handlers who directly handle food or food contact surfaces such as cutlery, plates and bowls during the course of their daily work activities. This includes cooks, chefs, caterers, kitchen stewards, kitchen hands, bar, and food and beverage attendants, and sometimes room attendants and front office staff.

Food handlers must comply with the requirements contained within the Australia New Zealand Food Standards Code.

In some States and Territories businesses are required to designate a food safety supervisor who is required to be certified as competent in this unit through a registered training organisation.

Food safety legislative and knowledge requirements may differ across borders. Those developing training to support this unit must consult the relevant state or territory food safety authority to determine any accreditation arrangements for courses, trainers and assessors.

The food handling certificate online course includes 15 online lessons supported by a learner resource. Each lesson is delivered via a webinar and followed by a Knowledge Check to confirm the student’s understanding of the information covered throughout the lesson.

Upon successful completion of the 15 Lessons and Knowledge Checks, the student must complete a Case Study. Thie requires the student to read and answer questions on a short food safety scenario.

The final component of the course is an Observer Report. This requires the student to successfully demonstrate various food safety tasks in the workplace. To meet this requirement, the student must be observed performing various food safety tasks by a co-worker or supervisor who is a qualified Food Handler or Food Supervisor. The Observer must complete the Observer Report, which the student must submit.

As part of our quality assurance, we may, prior to issuing a food safety certificate, contact the Observer and conduct a competency conversation to verify the student’s practical application of the food safety tasks in the workplace.

Student Resources

Students will be required to provide their Unique Student Identifier for enrolment as well as their email address, which is required for them to be able to access our systems.

As the course is delivered online via webinars and eLearning, students are required to have a computer or laptop and a reliable internet connection. The course is accessible on most computers, laptops and tablet devices. However, due to the small screen size, we don’t recommend completing the course on a mobile phone.

We use some of the latest eLearning technologies to deliver the courses. You will need to have a modern web browser to view and complete the course requirements.

To complete the practical requirements for the course, students will need access to a food business in which they can apply food safety practices and be observed by a co-worker or supervisor who is a qualified Food Handler of Food Supervisor. They will need to provide the contact of the observer.
